Serving Up a Healthier Banana Split Pie Recipe That's Also Gluten and Dairy Free
In May I did a TV segment on healthy summer desserts. I shared my favorite Watermelon Cake, Chocolate Drizzled Popcorn and a Gluten Free Dairy Free Banana Split Pie recipe.

Watermelon Cake

Every year I celebrate my life with this watermelon cake. Could a dietitian eating cake made of fruit be anymore stereotype? Nope! But Im okay with it. I love watermelon and could (read 'do') eat an entire watermelon as a single serving. Great for my happiness, bad for my blood sugar but thats why I tame myself on my birthday and make it a cake using homemade waffles as layers and nuts & seeds.

Chocolate Drizzled Popcorn
One of the best purchases I ever made was this $15 popcorn popper at Target. Did I walk into target for a popcorn maker? of course not. But am I glad I get to make my own popcorn and add whatever flavors I want? You bet!

Banana Split Pie
The original version includes cream cheese and whipped cream. To make is friendly for my dairy-free peeps, I swapped the cream cheese int he recipe for KiteHill cream cheese and used Almondmilk Whipped Cream. I also replaced the cherries for regular dark, sweet cherries for more nutrition.


INGREDIENTS
1 Wholly Wholesome 9” Traditional Organic Pie Shell
8 ounce package of cream cheese (softened) replace with KiteHill Cream Cheese for Dairy Free
2 cups powdered sugar
4 bananas (sliced)
8 ounce can crushed pineapple (well drained)
8 ounce container TruWhip, or your favorite all-natural whipped cream (thawed) Use Almondmilk Whipped Cream
10-15 maraschino cherries (dried on paper towels) replace with regular dark sweet cherries
Melted dark chocolate chips, for drizzling (optional)
DIRECTIONS
Bake Wholly Wholesome 9” Traditional Organic Pie Shell following instructions on package.
Use a mixer to blend cream cheese and powdered sugar until smooth.
Spread cream cheese mixture evenly on pie crust.
Place sliced bananas evenly on top of cream cheese mixture.
Top bananas with crushed pineapple.
Spread TruWhip on top of pineapple.
Top with maraschino cherries and melted chocolate.
Refrigerate until ready to serve and enjoy!
